We grew up honouring what was already here

Central Bar was born inside Valencia’s Central Market, amid the early-morning bustle, the comings and goings of the stalls and the voices that cross from one bar to another. It’s not just another stop among the stalls. It’s a bar that breathes at the same pace as everything around it, with the aroma of produce fresh off the stall, a bar counter designed to be enjoyed, and a dining room that invites you to stay.

When the time came to grow, we wanted to do it while honouring what was already there, respecting a century of memory. During the extension works, an original, century-old gate from the Market itself was uncovered. We kept it, and it became the symbol of how we understand growth: multiplying space, offering and team, without ever ceasing to be the same bar we’ve always been.
